Agar-agar: is made from different
types of seaweed. It has excellent
setting properties, similiar to gelatine,
and will set at room temperature.

Black fungus: is a type of wild
mushroom which is sold dried and
packaged.

Daikon: a basic food in Japan and
Korea, it is also called the giant white
radish. Daikon is similiar in taste to a
very tender young turnip which can be
used as a substitute. Daikon can be
grated and eaten raw, boiled, steamed,
stewed and stir-fried.
